Onion Soup

Onion soup (rasalyne) is a cold soup, traditional Samogitian dish for Christmas Eve with roasted herring. Into the traditional onion soup, which is made from herring, water, onions (Samogitian word cibulis means onion), the Samogitians also added the so-called juice of the whole beet. It was made as follows: the cooked beets were filled with water, a slice of bread was added and kept warm. Others fill with vinegar, sour milk or kefir, add dill. A simpler recipe is presented when herring is fried on a pan.
